- 1 cup ube (purple yam), cooked and pureed
- 1 cup sugar, divided
- 1 can (14 ounces) sweetened condensed milk
- 1 can (12 ounces) evaporated milk
- 5 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup milk
- 1/2 cup butter, softened
Instructions
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- Melt 1/2 cup of sugar in a saucepan over medium heat until caramelized, then pour it into the bottom of the greased cake pan.
- In a mixing bowl, whisk together sweetened condensed milk, evaporated milk, eggs, vanilla extract, and ube puree until smooth.
- In another bowl, combine flour, baking powder, and remaining sugar. Mix in the milk and softened butter until fully combined.
- Pour the ube mixture over the caramel, then spoon the flour batter on top to create layers.
- Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then invert onto a serving plate and serve.
Notes
Serve with whipped cream or fresh fruits. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for a month.
