Description
A delightful treat combining the natural sweetness of plums with the rich nuttiness of almonds in a light and fluffy cake. Perfect for afternoon tea or dessert.

- 200g self-raising flour
- 100g ground almonds
- 150g unsalted butter, softened
- 150g caster sugar
- 3 large eggs
- 100ml milk
- 400g plums, pitted and sliced
- 50g flaked almonds
- 1 teaspoon vanilla extract
- 1 pinch of salt
Instructions
- Preheat your oven to 180°C (350°F). Grease and line a traybake tin.
- Cream the softened butter and caster sugar together until light and fluffy (3-5 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract and milk.
- Sift in the self-raising flour, ground almonds, and salt; mix until just combined.
- Gently fold in the sliced plums, reserving a few for the top.
- Pour the mixture into the prepared tin, smooth the top, and scatter reserved plums and flaked almonds.
- Bake for 30-35 minutes or until a skewer comes out clean.
- Cool in the tin for a few minutes, then transfer to a wire rack and slice into bars.
Notes
Best served with whipped cream or vanilla ice cream. Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
