Instructions
- In a mixing bowl, combine powdered sugar and cocoa powder to form the base of your mint filling.
- Add light corn syrup, peppermint extract, and water to the mixture and stir until smooth.
- Roll the dough into small balls and flatten each into a patty about 1/4 inch thick. Arrange on a lined baking sheet.
- Place the patties in the freezer for about 30 minutes to firm up.
- Melt chocolate chips and coconut oil in a microwave-safe bowl until smooth.
- Dip each frozen patty into the melted chocolate, ensuring full coverage, then place back on the baking sheet.
- Allow the chocolate to set at room temperature or refrigerate for quicker hardening. Enjoy!
