Description

Delightful mint-filled chocolates coated in rich chocolate, perfect for festive occasions or any sweet cravings.


Ingredients

  • 2 cups powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons light corn syrup
  • 1/2 teaspoon peppermint extract
  • 2 tablespoons water
  • 1 cup semisweet chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. In a mixing bowl, combine powdered sugar and cocoa powder to form the base of your mint filling.
  2. Add light corn syrup, peppermint extract, and water to the mixture and stir until smooth.
  3. Roll the dough into small balls and flatten each into a patty about 1/4 inch thick. Arrange on a lined baking sheet.
  4. Place the patties in the freezer for about 30 minutes to firm up.
  5. Melt chocolate chips and coconut oil in a microwave-safe bowl until smooth.
  6. Dip each frozen patty into the melted chocolate, ensuring full coverage, then place back on the baking sheet.
  7. Allow the chocolate to set at room temperature or refrigerate for quicker hardening. Enjoy!
