- 2 pounds beef stew meat, cut into chunks
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 2 stalks celery, sliced
- 3 cups beef broth
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add the vegetable oil and wait until it heats up.
- Add the beef chunks to the pot and let them brown on all sides.
- Stir in the chopped onion and minced garlic, sautéing until translucent — about 3 minutes.
- Add the sliced carrots, celery, beef broth, tomato paste, thyme, rosemary, salt, and pepper. Stir well, close the lid, and set to ‘Manual’ mode, cooking on high pressure for 35 minutes.
- Once cooking time is completed, allow the pressure to release naturally for 10 minutes, then perform a quick release for remaining pressure.
- Stir in the frozen peas and let sit for a few minutes before serving.
Notes
For even richer flavor, use beef broth instead of chicken broth. Mix 1 tablespoon of cornstarch with cold water to thicken the stew, if desired.
