Description

Luscious cheesecake bars topped with sweet-tart cherry pie filling, perfect for the holiday season.


Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 2 packages (8 oz each) cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Press mixture into the bottom of the pan.
  3. In a large bowl, beat cream cheese with the remaining 3/4 cup of sugar until smooth and creamy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Pour cream cheese mixture over the crust and spread evenly. Bake for 25-30 minutes until center is set and edges are lightly browned.
  6. Remove from oven and cool completely on a wire rack.
  7. Top with cherry pie filling, spreading evenly.
  8. Chill in the refrigerator for at least 2 hours before cutting into squares.

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
