Description

Delightful blondies featuring the rich sweetness of white chocolate combined with the tartness of fresh raspberries, perfect for any occasion.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the butter in a saucepan over medium heat. Stir in the brown sugar and granulated sugar until well combined. Remove from heat and let it cool slightly.
  3. Once cooled, whisk in the eggs and vanilla extract until smooth and fully blended.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Be cautious not to overmix.
  5. Gently fold in the white chocolate chips and fresh raspberries.
  6. Pour the batter into the prepared baking pan and smooth it out evenly.
  7. Bake for 25-30 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
  8. Let it cool completely in the pan before cutting into squares and serving.

Notes

For added flavor, consider incorporating a pinch of cinnamon or almond extract. Store leftovers in an airtight container for up to 3 days.
