Refreshing Watermelon Popsicles with a zesty kick of Tajin seasoning, perfect for hot summer days.
Ingredients

- 4 cups watermelon, cubed
- 2 tablespoons lime juice
- 1–2 tablespoons Tajin seasoning
- Honey or agave syrup (optional, to taste)
Instructions
- Begin by cubing the fresh watermelon. Use ripe, sweet watermelon for the best results.
- In a blender, puree the watermelon cubes until smooth. If you prefer a smoother texture, you can strain the puree into a mixing bowl to remove any pulp.
- Stir in the lime juice and add honey or agave syrup if you want extra sweetness. Adjust the sweetness to your preference, tasting as you go.
- Pour the watermelon mixture into popsicle molds, filling each about 3/4 full. Sprinkle Tajin seasoning on top of each mold for that signature zesty flavor.
- Insert sticks into the molds and freeze for at least 240-360 minutes or until the popsicles are completely firm.
- To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull them out.
Notes
Best served immediately after removing from molds. Store leftovers in an airtight container in the freezer for up to 2 weeks.
