Description

Refreshing Watermelon Popsicles with a zesty kick of Tajin seasoning, perfect for hot summer days.


Ingredients

Scale
  • 4 cups watermelon, cubed
  • 2 tablespoons lime juice
  • 12 tablespoons Tajin seasoning
  • Honey or agave syrup (optional, to taste)

Instructions

  1. Begin by cubing the fresh watermelon. Use ripe, sweet watermelon for the best results.
  2. In a blender, puree the watermelon cubes until smooth. If you prefer a smoother texture, you can strain the puree into a mixing bowl to remove any pulp.
  3. Stir in the lime juice and add honey or agave syrup if you want extra sweetness. Adjust the sweetness to your preference, tasting as you go.
  4. Pour the watermelon mixture into popsicle molds, filling each about 3/4 full. Sprinkle Tajin seasoning on top of each mold for that signature zesty flavor.
  5. Insert sticks into the molds and freeze for at least 240-360 minutes or until the popsicles are completely firm.
  6. To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull them out.

Notes

Best served immediately after removing from molds. Store leftovers in an airtight container in the freezer for up to 2 weeks.
