Ingredients

  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Begin by preparing the corn. If using fresh corn, grill or boil it and cut the kernels off the cob. For frozen corn, cook according to package instructions. For canned corn, drain and rinse thoroughly.
  2. In a large mixing bowl, combine the cooked corn, halved cherry tomatoes, diced red onion, chopped cilantro, and diced avocado.
  3. In a separate small bowl, whisk together the chili powder, lime juice, salt, and pepper.
  4. Pour the dressing over the salad and gently toss everything together until well combined. Serve immediately or let it chill in the refrigerator for about an hour.
