Description

Delightful fusion of cheesecake and crème brûlée in a cupcake form, topped with a crispy caramelized sugar crust.


Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups cream cheese
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • Sugar for caramelizing

Instructions

  1. Preheat the oven to 325°F (163°C). Line a muffin tin with cupcake liners.
  2. Combine the graham cracker crumbs and melted butter in a bowl. Mix well and press into the cupcake liners.
  3. Beat the cream cheese and sugar together until smooth. Gradually add eggs, mixing well. Then mix in vanilla bean paste, sour cream, and heavy cream until fluffy.
  4. Pour the batter over the crusts in the liners, filling them 3/4 full. Bake for 20-25 minutes until edges are set.
  5. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. Sprinkle a thin layer of sugar on top of each cupcake and caramelize with a kitchen torch until golden.

Notes

For best results, store cupcakes without caramelized sugar and do that just before serving.
