Description
Delightful fusion of cheesecake and crème brûlée in a cupcake form, topped with a crispy caramelized sugar crust.

- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 2 cups cream cheese
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla bean paste
- 1/2 cup sour cream
- 1/4 cup heavy cream
- Sugar for caramelizing
Instructions
- Preheat the oven to 325°F (163°C). Line a muffin tin with cupcake liners.
- Combine the graham cracker crumbs and melted butter in a bowl. Mix well and press into the cupcake liners.
- Beat the cream cheese and sugar together until smooth. Gradually add eggs, mixing well. Then mix in vanilla bean paste, sour cream, and heavy cream until fluffy.
- Pour the batter over the crusts in the liners, filling them 3/4 full. Bake for 20-25 minutes until edges are set.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Sprinkle a thin layer of sugar on top of each cupcake and caramelize with a kitchen torch until golden.
Notes
For best results, store cupcakes without caramelized sugar and do that just before serving.
