Instructions
- Preheat the oven to 350°F (175°C). Blanch the fresh green beans in boiling water for 3-5 minutes, then transfer them to an ice bath.
- In a skillet, heat olive oil over medium heat. Add the sliced mushrooms and minced garlic, and sauté until tender, about 3-4 minutes.
- In a separate bowl, combine heavy cream, vegetable broth, dried thyme, dried rosemary, salt, and pepper. Stir until well mixed.
- In a baking dish, combine the blanched green beans, sautéed mushroom mixture, and creamy concoction. Top with crispy fried onions. Bake for 25-30 minutes or until bubbly and golden brown.
Notes
For a healthier option, use low-fat cream or a mix of cream and Greek yogurt. You can prepare the casserole ahead of time and freeze it until ready to bake.
