Ingredients

- 1 lb ground turkey
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for cooking
- Optional toppings: cilantro, sour cream, avocado
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the chopped onion to the pot and cook until translucent, about 5 minutes.
- Stir in the minced garlic and ground turkey, cooking until the turkey is browned and no longer pink.
- Add diced tomatoes, chicken broth, white beans, cumin, chili powder, salt, and pepper. Bring to a simmer and cook for 20-30 minutes, stirring occasionally.
- Serve hot in bowls, garnished with cilantro, sour cream, or avocado.
