Description

Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: cilantro, sour cream, avocado

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion to the pot and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and ground turkey, cooking until the turkey is browned and no longer pink.
  4. Add diced tomatoes, chicken broth, white beans, cumin, chili powder, salt, and pepper. Bring to a simmer and cook for 20-30 minutes, stirring occasionally.
  5. Serve hot in bowls, garnished with cilantro, sour cream, or avocado.
