Description

Ingredients

  • 10 tomatillos, husked and quartered
  • 1/2 onion, chopped
  • 12 jalapeños, chopped (adjust for spice preference)
  • 1/4 cup cilantro leaves
  • 1 lime, juiced
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the husked and quartered tomatillos, chopped onion, and jalapeños on a baking sheet and roast for about 15-20 minutes until soft and slightly charred.
  3. Once cooled, transfer roasted ingredients to a blender.
  4. Add cilantro, lime juice, and salt; blend until smooth, adjusting seasoning as desired.

Notes

Store in an airtight container in the refrigerator for up to one week or freeze for up to three months. Experiment by adding avocado for creaminess or chipotle for smokiness.
