Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cans (14 oz each) diced tomatoes
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup beef broth or water

Instructions

  1. In a large pot, brown the ground meat over medium heat, breaking it apart as it cooks until it’s no longer pink (about 5-7 minutes).
  2. Add the chopped onion, minced garlic, and chopped bell pepper to the pot and cook until the vegetables are tender and fragrant (about 5-6 minutes).
  3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper. Mix well and pour in the beef broth or water.
  4. Bring the chili to a boil, then reduce the heat to low and let it simmer for 30-45 minutes, stirring occasionally.

Notes

Chili tastes even better the next day as the flavors deepen. Serve with shredded cheese, sour cream, or avocado.
