Description

A delightful dish that combines jasmine rice with vibrant vegetables in a savory sauce, perfect for busy weeknights.


Ingredients

  • 2 cups cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat until it shimmers.
  2. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Push the garlic to one side of the pan and pour the beaten eggs on the other side. Scramble until fully cooked.
  4. Add the mixed vegetables and stir-fry for about 2-3 minutes.
  5. Add the cooked rice, soy sauce, fish sauce, and sugar. Mix thoroughly until heated through.
  6. Season with salt and pepper to taste.
  7. Stir in the green onions and cook for another minute.
  8. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

Use day-old rice for best results. You can add proteins like shrimp or chicken to customize your dish.
