- 2 cups cooked jasmine rice
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 green onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat the vegetable oil in a large pan or wok over medium heat until it shimmers.
- Add the minced garlic and sauté until fragrant, about 30 seconds.
- Push the garlic to one side of the pan and pour the beaten eggs on the other side. Scramble until fully cooked.
- Add the mixed vegetables and stir-fry for about 2-3 minutes.
- Add the cooked rice, soy sauce, fish sauce, and sugar. Mix thoroughly until heated through.
- Season with salt and pepper to taste.
- Stir in the green onions and cook for another minute.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
Use day-old rice for best results. You can add proteins like shrimp or chicken to customize your dish.
