Description

Juicy chicken marinated in coconut milk and red curry paste, grilled to perfection with a sweet and tangy lime finish.

Ingredients

Scale
  • 1 pound chicken breast, cut into cubes
  • 2 tablespoons red curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Skewers (wooden or metal)
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix the red curry paste, coconut milk, soy sauce, brown sugar, and lime juice to create a marinade.
  2. Add the chicken cubes to the marinade and let them sit for at least 30 minutes, ideally a few hours.
  3. Preheat the grill or oven. If using wooden skewers, soak them in water for 30 minutes.
  4. Thread the marinated chicken cubes onto skewers, ensuring they are evenly spaced.
  5. Grill on medium-high heat for about 10-15 minutes, turning occasionally, until fully cooked.
  6. Serve garnished with fresh cilantro.

Notes

For deeper flavor, marinate the chicken overnight. You can switch to shrimp or tofu for variations.
