- 1 cup mashed sweet potatoes
- 1 cup gluten-free flour
- 1/2 cup milk (dairy or non-dairy)
- 2 eggs
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 tablespoon maple syrup (optional)
- Butter or oil for cooking
Instructions
- Prepare your ingredients. If needed, microwave or steam whole sweet potatoes until tender, then mash.
- In a bowl, mix mashed sweet potatoes, gluten-free flour, milk, eggs, baking powder, cinnamon, salt, and maple syrup until combined into a smooth batter.
- Heat a skillet over medium heat and add butter or oil. Pour 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form and flip, cooking until golden brown, about 2-3 minutes. Serve warm with toppings.
Notes
For best results, ensure sweet potatoes are fully cooked and cooled before mashing. Don’t overmix the batter for fluffier pancakes.
