A delicious and nutritious twist on classic pancakes, perfect for breakfast or brunch.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup gluten-free flour
  • 1/2 cup milk (dairy or non-dairy)
  • 2 eggs
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 tablespoon maple syrup (optional)
  • Butter or oil for cooking

Instructions

  1. Prepare your ingredients. If needed, microwave or steam whole sweet potatoes until tender, then mash.
  2. In a bowl, mix mashed sweet potatoes, gluten-free flour, milk, eggs, baking powder, cinnamon, salt, and maple syrup until combined into a smooth batter.
  3. Heat a skillet over medium heat and add butter or oil. Pour 1/4 cup of batter for each pancake onto the skillet.
  4. Cook until bubbles form and flip, cooking until golden brown, about 2-3 minutes. Serve warm with toppings.

Notes

For best results, ensure sweet potatoes are fully cooked and cooled before mashing. Don’t overmix the batter for fluffier pancakes.
