Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat a splash of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3-4 minutes.
- Add the diced sweet potatoes, bell pepper, cumin, chili powder, salt, and pepper to the skillet. Stir well and cook until the sweet potatoes are tender, about 10-15 minutes.
- In a large casserole dish, combine the cooked sweet potato mixture with the black beans and corn. Mix everything well to ensure the flavors blend.
