Description

A hearty and filling casserole featuring sweet potatoes and black beans, perfect for family dinners or potlucks. This dish is nutritious, vegan-friendly, and customizable with cheese.

Ingredients

Scale
  • 2 large sweet potatoes, peeled and diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3-4 minutes.
  3. Add the diced sweet potatoes, bell pepper, cumin, chili powder, salt, and pepper to the skillet. Stir well and cook until the sweet potatoes are tender, about 10-15 minutes.
  4. In a large casserole dish, combine the cooked sweet potato mixture with the black beans and corn. Mix everything well to ensure the flavors blend.
  5. If desired, sprinkle cheese on top of the mixture for a delicious cheesy layer.
  6. Bake in the oven for 25-30 minutes, or until heated through and the cheese is melted and bubbly.
  7. Serve the casserole warm and enjoy the delightful mix of flavors and textures!
