A refreshing and guilt-free dessert made with fresh raspberries and erythritol, perfect for warm days and ketogenic diets.
Ingredients

- 2 cups fresh raspberries
- 1 cup water
- 1/2 cup erythritol (or other keto-friendly sweetener)
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- In a saucepan, combine the water and erythritol over medium heat, stirring until dissolved.
- Add the raspberries, lemon juice, and salt to the pan. Bring the mixture to a boil.
- Reduce heat and let it simmer for about 5 minutes until the raspberries are soft.
- Remove from heat, cool slightly, and blend until smooth. Strain through a fine mesh sieve to remove seeds, if desired.
- Pour the mixture into a shallow dish and freeze for about 4 hours, stirring every 30 minutes to break up ice crystals.
- Once fully frozen, scoop and serve cold.
Notes
Serve in chilled bowls or cups, garnished with fresh mint or whole raspberries. Store in an airtight container in the freezer for up to 2 weeks.
