- 1 1/2 cups sugar cookie dough
- 2 (8-ounce) packages cream cheese
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup heavy cream
- 1 cup white chocolate chips
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 325°F (160°C). Press the sugar cookie dough into the bottom of a 9-inch springform pan evenly. Bake for 10-12 minutes, or until the crust is lightly golden. Allow it to cool completely before adding the cheesecake filling.
- In a mixing bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the cooled sugar cookie crust, spreading it evenly. Bake for 45-50 minutes, or until the cheesecake is set but slightly jiggles in the center. Once done, turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour to cool gradually.
- Refrigerate the cheesecake for at least 4 hours, preferably overnight. To make the ganache, heat the heavy cream in a saucepan until it simmers. Pour it over the white chocolate chips and let it sit for a minute, then stir until smooth. Once the cheesecake has chilled, pour the ganache over the top and allow it to set. Slice and serve!
Notes
For a richer flavor, consider using premium white chocolate chips for your ganache. You can substitute the sugar cookie crust with a graham cracker crust for a different flavor profile.
