- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh strawberries, pureed
- 1/4 cup fresh strawberries, chopped for garnish
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs with the melted butter and press into the bottom of the pan.
- Beat the cream cheese and granulated sugar in a large bowl until smooth. Add vanilla and eggs one at a time, mixing well.
- Pour half of the cream cheese mixture over the crust, then swirl in half of the pureed strawberries. Add the remaining cream cheese mixture and swirl in the rest of the pureed strawberries.
- Bake for 50-60 minutes until set but slightly jiggly in the center.
- Turn off the oven and let the cheesecake cool inside for an hour.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Garnish with chopped strawberries before serving.
Notes
For the best flavor, refrigerate overnight. Use ripe strawberries for optimal sweetness.
