- 1 ½ cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, pureed
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, 1/3 cup sugar, and melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan and set aside.
- Beat the cream cheese in a large bowl until smooth. Add the sugar and vanilla extract, and mix until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until smooth. Pour half of the cheesecake batter over the crust.
- Mix the pureed strawberries and the strawberry jam, and dollop it onto the batter. Swirl with a knife to create a marbled effect. Pour the remaining cheesecake batter over the strawberry layer.
- Bake for 55-60 minutes or until the center is set. Let cool and then refrigerate for at least 4 hours before serving.
Notes
Store leftover cheesecake in an airtight container in the refrigerator for up to 5 days. Freezing is also an option.
