Description

A delightful combination of sweet, juicy strawberries, rich whipped cream, and fluffy biscuits perfect for summer gatherings.

Ingredients

Scale
  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Mix the sliced strawberries with sugar and let them sit to release their juices.
  2. Preheat the oven to 425°F (220°C). In a large bowl, combine the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in heavy cream and vanilla extract until just combined. Turn the dough onto a floured surface and knead gently. Roll it out to about 1 inch thickness and cut out rounds of dough.
  4. Bake for 15-20 minutes until golden brown, then let the cakes cool.
  5. Layer the bottom half with the prepared strawberries and spoon over some whipped cream. Top with the other half of the cake and add more strawberries and whipped cream before serving.

Notes

Store individual components separately; assemble just before serving for best results.
