Ingredients

  • 1 ½ cups whole wheat flour
  • 1 scoop protein powder
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup Greek yogurt
  • ¼ cup milk
  • ¼ cup honey
  • 2 large eggs
  • 1 ½ cups chopped fresh strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the whole wheat flour, protein powder, baking powder, baking soda, and salt in a mixing bowl.
  3. Whisk together the Greek yogurt, milk, honey, and eggs until smooth in another bowl.
  4. Mix the wet ingredients into the dry ingredients until just combined; fold in the chopped strawberries gently.
  5. Fill each muffin cup evenly with the batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Cool the muffins in the tin for a few minutes before transferring to a wire rack to cool completely.
