- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup homemade strawberry jam
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until fluffy.
- Beat in the egg and vanilla extract.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture until a dough forms.
- Roll out the dough on a floured surface to about 1/4 inch thick and cut into squares.
- Place half of the squares on a lined baking sheet and add a dollop of strawberry jam in the center of each.
- Top with the remaining squares and press the edges to seal them.
- Bake for 12-15 minutes or until lightly golden.
- Allow the cookies to cool before dusting them with powdered sugar.
