Description

Delightful bars featuring a buttery crust topped with lemon filling and juicy strawberries.


Ingredients

  • 1 cup softened unsalted butter
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup fresh lemon juice
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped strawberries
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and fresh lemon juice until fully combined.
  4. Whisk together the flour, baking powder, and salt in another bowl, then gradually add to the butter mixture.
  5. Fold in the chopped strawberries and spread the mixture into the prepared baking dish.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool completely, then drizzle with a glaze made from powdered sugar and lemon juice, cut into squares, and enjoy.
