Ingredients
Scale
- 1 cup crushed graham crackers
- 1/2 cup melted butter
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped cream
- 1 cup fresh strawberries, diced
- 1/4 cup strawberry sauce
- Optional: additional crushed graham crackers for topping
Instructions
- In a bowl, mix crushed graham crackers with melted butter until well combined. Press the mixture into the bottom of a lined muffin pan to form the crust.
- In a separate bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth and creamy. This forms the rich base of your cheesecake filling.
- Gently fold in the whipped cream until everything is well combined, adding air and making the mixture light and fluffy.
- Add the diced strawberries to the cheesecake mixture and gently fold them in to distribute the sweetness throughout.
- Spoon the cheesecake mixture into the muffin crusts, smoothing the tops with a spatula or the back of a spoon for an even finish.
- Drizzle strawberry sauce on top of each bite and sprinkle with additional crushed graham crackers if desired for an extra crunch.
- Chill in the refrigerator for at least 2 hours before serving, allowing the flavors to meld and the bites to firm up.
