- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, diced
- 1 cup flour
- ½ cup brown sugar
- 1 tsp cinnamon
Instructions
- Preheat your oven to 325°F (165°C) to prepare it for baking the cheesecake.
- Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Press the mixture evenly into the bottom of a springform pan to form a solid crust.
- Beat together the softened cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream until well combined.
- Pour the smooth cream cheese mixture over the prepared crust, spreading it evenly.
- Combine flour, brown sugar, cinnamon, and diced strawberries in a separate bowl. Sprinkle this mixture over the cheesecake filling.
- Bake in your preheated oven for 50-60 minutes, or until the center is set yet slightly jiggly.
- Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Notes
Serve with whipped cream and extra strawberries for presentation. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to 3 months.
