Description

Creamy cheesecake bars with fresh strawberries and a buttery biscuit crust, perfect for any occasion.


Ingredients

  • 1 cup digestive biscuits, crushed
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries, pureed
  • 1/4 cup strawberry sauce for topping
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Mix together the crushed digestive biscuits and melted butter until combined. Press this mixture into the bottom of the prepared baking dish.
  3. Beat the cream cheese, sugar, and vanilla extract until smooth. Add in the eggs one at a time, mixing well after each addition. Fold in the pureed strawberries.
  4. Pour the cheesecake mixture over the crust in the baking dish. Bake for 25-30 minutes, until the edges are set and the center has a slight jiggle.
  5. Allow to cool, then refrigerate for at least 4 hours or until firm.
  6. Cut into bars, drizzle with strawberry sauce, and garnish with fresh strawberries before serving.

Notes

For best results, use softened cream cheese and do not overbake the bars.
