- 1 cup digestive biscuits, crushed
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, pureed
- 1/4 cup strawberry sauce for topping
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- Mix together the crushed digestive biscuits and melted butter until combined. Press this mixture into the bottom of the prepared baking dish.
- Beat the cream cheese, sugar, and vanilla extract until smooth. Add in the eggs one at a time, mixing well after each addition. Fold in the pureed strawberries.
- Pour the cheesecake mixture over the crust in the baking dish. Bake for 25-30 minutes, until the edges are set and the center has a slight jiggle.
- Allow to cool, then refrigerate for at least 4 hours or until firm.
- Cut into bars, drizzle with strawberry sauce, and garnish with fresh strawberries before serving.
Notes
For best results, use softened cream cheese and do not overbake the bars.
