Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract (for whipped cream)
  • Fresh strawberries and whipped cream for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
  2. Cream together the sugar and butter until light and fluffy in a large bowl.
  3. Add eggs, milk, vanilla extract, and pureed strawberries to the creamed mixture; blend well. In another bowl, whisk together the flour and baking powder, then gradually add it to the wet ingredients until combined. Divide the batter evenly between the two prepared pans and bake for 25-30 minutes.
  4. Allow the cakes to cool completely, then prepare the cheesecake layer by beating together the cream cheese and powdered sugar until smooth.
  5. Whip the heavy cream with vanilla extract until stiff peaks form, then gently fold it into the cream cheese mixture.
  6. Assemble by placing one cake layer on a serving plate, spreading a generous layer of the cheesecake filling on top, adding the second layer, and using the remaining cheesecake mixture to frost the cake. Garnish with fresh strawberries and whipped cream.
  7. Chill in the refrigerator before serving to set the flavors.

Notes

For best results, use room-temperature cream cheese and cold heavy cream for whipping.
