- 1 lb chicken breast, diced
- 1 package gnocchi
- 4 cups chicken broth
- 2 cups fresh spinach
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp oregano
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions, diced carrots, and diced celery. Cook for 5-7 minutes until softened.
- Stir in minced garlic, thyme, and oregano. Sauté for another minute until fragrant.
- Add diced chicken. Cook until no longer pink, about 5-7 minutes.
- Pour in chicken broth and bring to a boil. Stir in gnocchi and cook according to package instructions, about 3-5 minutes. Add spinach and let it wilt for 2 minutes. Season with salt and pepper, then serve hot.
Notes
Serve with grated Parmesan or a dash of lemon juice. Store leftovers in an airtight container for up to 3 days or freeze without gnocchi for up to 3 months.
