A delightful blend of tender chicken, pillowy gnocchi, and vibrant vegetables that captures the essence of a warm, comforting meal.


Ingredients

  • 1 lb chicken breast, diced
  • 1 package gnocchi
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp oregano
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions, diced carrots, and diced celery. Cook for 5-7 minutes until softened.
  2. Stir in minced garlic, thyme, and oregano. Sauté for another minute until fragrant.
  3. Add diced chicken. Cook until no longer pink, about 5-7 minutes.
  4. Pour in chicken broth and bring to a boil. Stir in gnocchi and cook according to package instructions, about 3-5 minutes. Add spinach and let it wilt for 2 minutes. Season with salt and pepper, then serve hot.

Notes

Serve with grated Parmesan or a dash of lemon juice. Store leftovers in an airtight container for up to 3 days or freeze without gnocchi for up to 3 months.
