Description

A delightful casserole featuring the earthy taste of spinach and the sweet flavors of butternut squash, topped with melted cheese for a comforting meal.


Ingredients

Scale
  • 2 cups chopped fresh spinach
  • 2 cups diced butternut squash
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Layer the diced butternut squash at the bottom of a greased casserole dish.
  3. Mix together the chopped spinach, ricotta cheese, mozzarella cheese, eggs, garlic powder, onion powder, salt, and pepper in a bowl until well combined.
  4. Spread the spinach mixture evenly over the squash layer in the casserole dish.
  5. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes until the top is golden and the squash is tender.
  7. Allow to cool for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen for up to 3 months.
