- 2 cups chopped fresh spinach
- 2 cups diced butternut squash
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Layer the diced butternut squash at the bottom of a greased casserole dish.
- Mix together the chopped spinach, ricotta cheese, mozzarella cheese, eggs, garlic powder, onion powder, salt, and pepper in a bowl until well combined.
- Spread the spinach mixture evenly over the squash layer in the casserole dish.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the top is golden and the squash is tender.
- Allow to cool for a few minutes before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen for up to 3 months.
