- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 4 large eggs
- 1 cup apple cider
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the pan.
- Beat the cream cheese until smooth, gradually adding 1 cup sugar. Add eggs one at a time, mixing after each.
- Stir in apple cider, cinnamon, nutmeg, vanilla, and flour until just combined.
- Pour batter over crust and bake for 55-60 minutes until the center is set.
- Let cool in the oven with the door ajar for an hour.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
Top with whipped cream, caramel, or nuts for added texture. Can be made ahead and stored in the fridge or frozen.
