Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 cup apple cider
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the pan.
  3. Beat the cream cheese until smooth, gradually adding 1 cup sugar. Add eggs one at a time, mixing after each.
  4. Stir in apple cider, cinnamon, nutmeg, vanilla, and flour until just combined.
  5. Pour batter over crust and bake for 55-60 minutes until the center is set.
  6. Let cool in the oven with the door ajar for an hour.
  7. Refrigerate for at least 4 hours or overnight before serving.

Notes

Top with whipped cream, caramel, or nuts for added texture. Can be made ahead and stored in the fridge or frozen.
