Description

Delightful soft and fluffy muffins perfect for breakfast or as a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Mix the flour, sugar, baking powder, and salt in a bowl until combined.
  3. Whisk together the milk, vegetable oil, eggs, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry and stir until just combined.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool slightly in the pan before transferring to a wire rack.
