Description

A delightful treat combining the goodness of protein with the sweet, chewy texture of traditional blondies, perfect for post-workout snacks or guilt-free desserts.


Ingredients

  • 1 cup almond butter
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup protein powder (vanilla or unflavored)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Combine the almond butter, honey (or maple syrup), eggs, and vanilla extract in a mixing bowl.
  3. Stir in the protein powder, baking soda, and salt until just combined. If desired, gently fold in chocolate chips.
  4. Pour the batter into the prepared pan and spread it evenly with a spatula.
  5. Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted comes out clean.
  6. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Cut into bars and enjoy!

Notes

These blondies can be served with vanilla ice cream or Greek yogurt, and can be stored at room temperature for up to 3 days.
