- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup molasses
- 1 large egg
- 1 tsp vanilla extract
- Sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, combine flour, baking soda, ginger, cinnamon, cloves, and salt. Mix well and set aside.
- In a separate bowl, beat butter and brown sugar until smooth. Add molasses, egg, and vanilla; mix until well combined.
- Gradually add the dry flour mixture to the wet ingredients. Mix until just combined.
- Roll the dough into 1-inch balls and coat in sugar.
- Place cookie balls on the baking sheet and bake for 10-12 minutes.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a richer flavor, use dark molasses instead of light. Don’t overbake the cookies; they should look slightly underbaked in the center when removed from the oven.
