Description

Delicious, warm, and spicy molasses cookies that offer a perfect balance of sweetness and chewiness.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • Sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine flour, baking soda, ginger, cinnamon, cloves, and salt. Mix well and set aside.
  3. In a separate bowl, beat butter and brown sugar until smooth. Add molasses, egg, and vanilla; mix until well combined.
  4. Gradually add the dry flour mixture to the wet ingredients. Mix until just combined.
  5. Roll the dough into 1-inch balls and coat in sugar.
  6. Place cookie balls on the baking sheet and bake for 10-12 minutes.
  7. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a richer flavor, use dark molasses instead of light. Don’t overbake the cookies; they should look slightly underbaked in the center when removed from the oven.
