- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 cup softened butter
- 1 1/2 cups white sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp almond extract
- Powdered sugar for dusting
- Buttercream frosting for assembly
Instructions
- Preheat your oven to 375°F (190°C) and gather all your ingredients.
- In a mixing bowl, combine the all-purpose flour, baking soda, and baking powder. In a separate large bowl, cream together the softened butter and white sugar until smooth and fluffy. Beat in the egg, vanilla extract, and almond extract.
- Gradually add the dry ingredient mixture until just blended.
- Roll the dough into rounded teaspoonfuls and place them onto ungreased baking pans, leaving space between each cookie. Flatten each ball with the bottom of a glass dipped in sugar. Bake for 8 to 10 minutes until light golden color, then transfer to wire racks to cool.
- Once cooled, spread a layer of buttercream frosting on one cookie and sandwich with another. Dust the tops with powdered sugar.
