- 1/2 cup full-fat sour cream
- 1/2 cup pure canned pumpkin
- 1/4 cup apple juice
- 3 tablespoons granulated sugar (for batter)
- 2 tablespoons light brown sugar (for batter)
- 1 large egg yolk, at room temperature
- 1/2 teaspoon vanilla extract
- 1 cup fresh apple cubes
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- Mix together the streusel topping ingredients until coarse crumbs form. Set aside.
- Whisk together sour cream, pumpkin, apple juice, sugars, and egg yolk in a bowl.
- Combine the dry ingredients in another bowl and gradually add to the wet mixture.
- Fold in the fresh apple cubes gently.
- Divide the batter into muffin cups and sprinkle with streusel topping.
- Bake for approximately 18 minutes or until a toothpick comes out clean.
- Cool the muffins in the pan for a few minutes before transferring to a wire rack.
