Description

Delightful muffins blending ripe apples and pumpkin with warm spices, perfect for breakfast or a cozy snack.


Ingredients

  • 3 tablespoons all-purpose flour (for streusel)
  • 1 ½ tablespoons cold unsalted butter, cubed
  • 1 ½ tablespoons light brown sugar
  • 2 teaspoons granulated sugar (for streusel)
  • A pinch of salt
  • 1/4 teaspoon ground cinnamon (or pumpkin pie spice)
  • 1/2 cup plus 1 tablespoon all-purpose flour (for batter)
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt (for batter)
  • 3/4 teaspoon pumpkin pie spice (for batter)
  • 1/2 cup full-fat sour cream
  • 1/2 cup pure canned pumpkin
  • 1/4 cup apple juice
  • 3 tablespoons granulated sugar (for batter)
  • 2 tablespoons light brown sugar (for batter)
  • 1 large egg yolk, at room temperature
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh apple cubes

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. Mix together the streusel topping ingredients until coarse crumbs form. Set aside.
  3. Whisk together sour cream, pumpkin, apple juice, sugars, and egg yolk in a bowl.
  4. Combine the dry ingredients in another bowl and gradually add to the wet mixture.
  5. Fold in the fresh apple cubes gently.
  6. Divide the batter into muffin cups and sprinkle with streusel topping.
  7. Bake for approximately 18 minutes or until a toothpick comes out clean.
  8. Cool the muffins in the pan for a few minutes before transferring to a wire rack.
