- 1 pound ground beef or Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 2 cups beef broth
- 1 tablespoon tomato paste
- 2 teaspoons Italian seasoning
- 8 ounces lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a skillet, brown the ground beef or Italian sausage over medium heat. Drain excess fat and transfer the cooked meat to the slow cooker.
- Add the chopped onion, minced garlic, diced tomatoes (with their juice), beef broth, tomato paste, Italian seasoning, and a pinch of salt and pepper. Stir everything together well to combine the flavors.
- Cover and cook on low for 6 hours or on high for 3 hours, allowing all the ingredients to meld together beautifully.
- About 30 minutes before serving, stir in the broken lasagna noodles. Once the noodles have cooked, gently fold in the ricotta and half of the mozzarella cheese until melted and well-combined. Serve hot, garnishing each bowl with the remaining mozzarella and fresh basil.
Notes
For extra vegetables, consider including chopped bell peppers or spinach. Adjust the thickness of the soup by adding more beef broth if desired.
