Ingredients

- 1 lb beef (chuck or brisket), cut into strips
- 4 cups beef broth
- 2 cups water
- 2 packages ramen noodles (discard seasoning packets)
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon ginger, minced
- 2 carrots, sliced
- 2 green onions, sliced (for garnish)
- Salt and pepper to taste
Instructions
- In a slow cooker, combine the beef, beef broth, water, onion, garlic, soy sauce, ginger, and carrots.
- Season the mixture with salt and pepper to taste.
- Cover the slow cooker and cook on low for 6-8 hours, or until the beef is tender and easily shredded.
- About 30 minutes before serving, add the ramen noodles to the slow cooker. Cook until the noodles are tender and incorporate well into the broth.
- Serve hot, garnished with sliced green onions for a fresh crunch.
Notes
For richer flavor, sear the beef before adding it to the slow cooker. Feel free to add more vegetables for added nutrition.
