Description

A comforting and flavorful ramen made effortlessly in a slow cooker with tender beef and rich broth.


Ingredients

  • 1 lb beef (chuck or brisket), cut into strips
  • 4 cups beef broth
  • 2 cups water
  • 2 packages ramen noodles (discard seasoning packets)
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon ginger, minced
  • 2 carrots, sliced
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine the beef, beef broth, water, onion, garlic, soy sauce, ginger, and carrots.
  2. Season the mixture with salt and pepper to taste.
  3. Cover the slow cooker and cook on low for 6-8 hours, or until the beef is tender and easily shredded.
  4. About 30 minutes before serving, add the ramen noodles to the slow cooker. Cook until the noodles are tender and incorporate well into the broth.
  5. Serve hot, garnished with sliced green onions for a fresh crunch.

Notes

For richer flavor, sear the beef before adding it to the slow cooker. Feel free to add more vegetables for added nutrition.
