- 2 pounds beef stew meat
- 1 can (14.5 ounces) diced tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 carrots, sliced
- 2 potatoes, diced
Instructions
- Preheat your oven to 300°F (150°C).
- In a large skillet, heat olive oil over medium heat. Add beef stew meat and brown on all sides.
- In a large casserole dish, combine browned beef, diced tomatoes, chopped onion, minced garlic, beef broth, dried oregano, dried basil, salt, and pepper. Stir well.
- Add sliced carrots and diced potatoes to the mixture in the casserole dish.
- Cover the casserole dish tightly with a lid or aluminum foil.
- Bake in the preheated oven for 3 to 4 hours, or until the beef is fork-tender.
- Let cool slightly before serving hot.
Notes
Serve with a green salad or crusty bread. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
