Description

A hearty slow-baked beef casserole filled with tender meat, herbs, and juicy tomatoes, perfect for family dinners.


Ingredients

  • 2 pounds beef stew meat
  • 1 can (14.5 ounces) diced tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 carrots, sliced
  • 2 potatoes, diced

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large skillet, heat olive oil over medium heat. Add beef stew meat and brown on all sides.
  3. In a large casserole dish, combine browned beef, diced tomatoes, chopped onion, minced garlic, beef broth, dried oregano, dried basil, salt, and pepper. Stir well.
  4. Add sliced carrots and diced potatoes to the mixture in the casserole dish.
  5. Cover the casserole dish tightly with a lid or aluminum foil.
  6. Bake in the preheated oven for 3 to 4 hours, or until the beef is fork-tender.
  7. Let cool slightly before serving hot.

Notes

Serve with a green salad or crusty bread. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
