Description

A delightful twist on classic breakfast, combining rich flavors of spiced fruitcake in a soft, buttery loaf, perfect for breakfast or afternoon treats.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup mixed dried fruit
  • 1/2 cup diced marzipan
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a bowl.
  3. Cream together softened butter and brown sugar until fluffy, then beat in eggs one at a time. Stir in milk.
  4. Mix dry ingredients into wet mixture until just combined, then fold in dried fruit, marzipan, and lemon zest.
  5. Pour the batter into the loaf pan and smooth the top. Bake for 50-60 minutes, until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack.
