- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1/2 cup milk
- 1 cup mixed dried fruit
- 1/2 cup diced marzipan
- Zest of 1 lemon
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a bowl.
- Cream together softened butter and brown sugar until fluffy, then beat in eggs one at a time. Stir in milk.
- Mix dry ingredients into wet mixture until just combined, then fold in dried fruit, marzipan, and lemon zest.
- Pour the batter into the loaf pan and smooth the top. Bake for 50-60 minutes, until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
