Description
Delightful muffins inspired by traditional Simnel cake, perfect for Easter or any sweet occasion, topped with marzipan and bursting with mixed dried fruits.

- 200g mixed dried fruit
- 250g self-raising flour
- 100g unsalted butter, softened
- 100g caster sugar
- 2 large eggs
- 150ml milk
- 1 tsp mixed spice powder
- Marzipan for topping
- Icing sugar for dusting
Instructions
- Preheat your oven to 190°C (375°F) and line a muffin tray with muffin cases.
- Cream together the softened butter and caster sugar until light and fluffy.
- Beat in the eggs one at a time, then add the milk and mix thoroughly.
- Sift in the flour and mixed spice powder, then gently fold in the dried fruit until evenly distributed.
- Spoon the mixture into the prepared muffin cases, filling them about 2/3 full.
- Bake for 20-25 minutes or until golden and a skewer inserted comes out clean.
- Allow to cool slightly before topping each muffin with marzipan and dusting with icing sugar.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to a month.
