Ingredients

- 1 cup sushi rice
- 2 cups water
- 1/2 pound fresh salmon, diced
- 1 avocado, diced
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- Nori sheets, cut into small squares
- Panko breadcrumbs
- Oil for frying
Instructions
- Rinse sushi rice in cold water until water runs clear.
- Combine rice and water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. After cooking, let sit covered for 10 minutes.
- In a bowl, mix diced salmon, avocado, green onions, soy sauce, rice vinegar, sesame oil, and salt.
- Once the rice is cool, form small patties and dip in Panko breadcrumbs.
- Heat oil in a skillet over medium heat and fry the rice bites until golden brown on both sides, about 2-3 minutes each.
- Serve with nori squares on the side.
Notes
For a spicy kick, add sriracha to the salmon mixture. Use fresh salmon for the best flavor, and ensure your oil is hot enough before frying.
