Ingredients
- Rice paper sheets
- Sweet rice flour (glutinous rice flour)
- Sugar
- Water
- Ice cream (any flavor of your choice)
- Cornstarch (for dusting)
Instructions
- Combine sweet rice flour, sugar, and water in a bowl to form a smooth batter.
- Steam the mixture in a heatproof dish for about 20 minutes until it becomes a sticky dough.
- Allow the dough to cool slightly, then dust your workspace with cornstarch and transfer the dough to it.
- Flatten the mochi dough with your hands or a rolling pin until it is about 1/4 inch thick. Cut the dough into squares or circles with a cookie cutter.
- Place a small scoop of ice cream in the center of each piece.
- Fold the edges up and pinch to seal around the ice cream.
- Wrap each mochi bite in a rice paper sheet.
- Place in the freezer for at least one hour to firm up before serving.
