- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 cup milk
- 1/4 cup melted butter
- 1 egg
- 1 cup chopped rhubarb
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Combine all-purpose flour, 1/4 cup sugar, baking powder, salt, and 1 teaspoon of cinnamon in a mixing bowl.
- Mix the milk, melted butter, and egg in a separate bowl until combined. Gradually add to the dry ingredients, stirring until you have a cohesive dough.
- Flour your work surface and roll the dough into a rectangle, about 1/4 inch thick, then spread the chopped rhubarb evenly over it.
- Combine brown sugar and 1/4 cup sugar for the filling and sprinkle it over the rhubarb. Roll the dough tightly from one end to create a log and cut into 1-inch slices.
- Place the rolls in a greased baking dish with space between each roll. Bake for 25-30 minutes or until golden brown and fragrant.
- Allow the rolls to cool slightly before serving.
Notes
Serve warm with icing or whipped cream. Store in an airtight container at room temperature for up to 2 days, or freeze for up to 2 months.
