Description

Delightful rhubarb cinnamon rolls combining tangy rhubarb with warm cinnamon and sugar, perfect for breakfast or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 cup chopped rhubarb
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine all-purpose flour, 1/4 cup sugar, baking powder, salt, and 1 teaspoon of cinnamon in a mixing bowl.
  3. Mix the milk, melted butter, and egg in a separate bowl until combined. Gradually add to the dry ingredients, stirring until you have a cohesive dough.
  4. Flour your work surface and roll the dough into a rectangle, about 1/4 inch thick, then spread the chopped rhubarb evenly over it.
  5. Combine brown sugar and 1/4 cup sugar for the filling and sprinkle it over the rhubarb. Roll the dough tightly from one end to create a log and cut into 1-inch slices.
  6. Place the rolls in a greased baking dish with space between each roll. Bake for 25-30 minutes or until golden brown and fragrant.
  7. Allow the rolls to cool slightly before serving.

Notes

Serve warm with icing or whipped cream. Store in an airtight container at room temperature for up to 2 days, or freeze for up to 2 months.
