Instructions
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a bowl, combine crushed graham crackers, 1/2 cup sugar, and melted butter. Press into the bottom of the prepared pan.
- In another bowl, beat together 1 cup sugar and softened cream cheese until smooth. Add sour cream and vanilla extract, mix well. Incorporate eggs one at a time.
- Whisk together flour, cocoa powder, baking powder, and salt. Gradually fold into the cream cheese mixture, alternating with red food coloring.
- Pour the batter over the crust and bake for 50-60 minutes, until set but slightly jiggly.
- Turn off the oven, crack the door, and let cool in the oven for about an hour.
- Refrigerate for at least 4 hours to firm up.
- Before serving, decorate with whipped cream and festive toppings.
