- 1 cup red lentils
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Water as needed
- Chopped parsley for garnish
Instructions
- Rinse the lentils under cold water to remove any debris.
- Combine the rinsed lentils and 2 1/2 cups of water in a pot, bringing it to a vigorous boil, then simmer until tender (15-20 minutes).
- Drain the lentils and let them cool slightly. Blend the lentils, tahini, olive oil, lemon juice, garlic, and cumin in a food processor, adding water to reach desired consistency.
- Adjust seasoning with salt and pepper, then transfer to a serving bowl, garnishing with parsley. Serve with pita bread or fresh vegetables.
Notes
For a smokier flavor, add a pinch of smoked paprika. Adjust garlic amount for bolder flavor.
