Description

Sweet, satisfying quinoa breakfast cookies packed with nutrition, perfect for breakfast or as a healthy snack.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup chocolate chips or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cooked quinoa, oats, peanut butter, honey or maple syrup, vanilla extract, and cinnamon. Mix until well combined.
  3. Stir in the chocolate chips or dried fruit, then drop spoonfuls of the mixture onto the prepared baking sheet, flattening them slightly. Bake for 10-12 minutes until lightly golden on the edges.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store the cookies in an airtight container at room temperature for up to 5 days. Freeze for longer storage.
