- 1 cup cooked quinoa
- 1 cup oats
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 cup chocolate chips or dried fruit
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cooked quinoa, oats, peanut butter, honey or maple syrup, vanilla extract, and cinnamon. Mix until well combined.
- Stir in the chocolate chips or dried fruit, then drop spoonfuls of the mixture onto the prepared baking sheet, flattening them slightly. Bake for 10-12 minutes until lightly golden on the edges.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store the cookies in an airtight container at room temperature for up to 5 days. Freeze for longer storage.
