Description

Quick Florentines are delightful, nutty treats combining dried fruits, seeds, and a chocolatey finish, perfect for snacking or dessert.


Ingredients

Scale
  • 50g unsalted butter
  • 2 tablespoons honey
  • 100g icing sugar
  • 1 teaspoon vanilla extract
  • 75g flaked almonds
  • 50g dried fruits
  • 75g mixed seeds (pumpkin, sunflower, or sesame)
  • 100g dark chocolate (for dipping)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Melt the butter and honey in a saucepan over low heat, stirring until smooth.
  3. Add icing sugar and vanilla extract, mix until combined, then remove from heat and fold in almonds, dried fruits, and mixed seeds.
  4. Spoon the mixture onto a lined baking sheet, forming small rounds.
  5. Bake for 10-12 minutes or until golden brown.
  6. Allow to cool slightly, then dip the base of each Florentine in melted dark chocolate and place back on parchment to set.

Notes

Store in an airtight container for up to one week at room temperature or refrigerate for up to two weeks, layered with parchment paper.
