- 2 cups heavy cream
- 1 cup pumpkin puree
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 5 large egg yolks
- Additional granulated sugar for caramelizing top
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium saucepan, combine the heavy cream, pumpkin puree, granulated sugar, vanilla extract, and pumpkin pie spice. Heat the mixture over medium heat until warm but not boiling, stirring gently.
- In a separate bowl, whisk the egg yolks until smooth. Gradually pour the warm cream mixture into the egg yolks, whisking continuously. Pour the mixture into individual ramekins.
- Place the ramekins in a baking dish and fill with hot water halfway up the sides of the ramekins. Bake for 40-45 minutes, until set with a slight jiggle. Cool to room temperature and refrigerate for at least 2 hours.
- Before serving, sprinkle a thin layer of granulated sugar on top and use a kitchen torch to caramelize it to a golden-brown topping.
Notes
For the best flavor, use fresh pumpkin puree or make your own. Serve in ramekins for a rustic touch, and consider pairing with whipped cream or nuts.
